For the last few days I've been doing a lot of unhealthy eating out, and minimum cooking at home. Saturday was no different. After I came home from class, I ate a bowl of vegetable soup Anna was testing for Robyn, but still wanted something extra before starting reviewing math for GRE.
I had a leftover pork tenderloin from Sur La Table class, a few crackers, shredded cheese and salsa, and decided to make mini appetizers!
Directions: put a cracker on a microwave-safe plate, top with a few slices of pork tenderloin, add a spoon of salsa, and finish everything off with shredded cheese. Microwave for 1-2 minutes and eat while still hot.

oh man this looks totally good. could also see you doing with marinara sauce and moz instead. :)
