This past Saturday I flew to Savannah for a few days to escape the crowds coming to DC for the Inauguration weekend. The night before, DeM came over to play chess and I had no time to pack for my trip. That meant waking up at 7:30 am to pack, take out the garbage, and make breakfast. Since I knew I will be eating out the entire weekend, I thought I should make breakfast at home and try to use up some of the food that would otherwise go bad.
I decided to make a hash using leftovers from Friday's dinner. All I did was heat up the ground beef and my version of ratatouille (eggplant, carrots, mushrooms, onions) and topped the mixture with two fried eggs, cut up tomatoes and thinly sliced scallions. Who said you can't have dinner for breakfast?
This was a really flavorful and filling breakfast! Give it a try, and let me know what you think.
I could eat breakfast anytime of day and I cannot tell you how often part of "last nights" dinner ends up mixed with egg the next morning!!
ReplyDeleteHmmm, the ultimate breakfast. Would love to eat breakfast like this everyday. I'd normally make an omelet with leftover ratatouille. Delicious.
