Home Made Ice Cream: 3 Flavors

Last weekend I decided to make home-made ice cream. Ok, it wasn't completely voluntary (more on that later), but it was a fun project.

I used a simple recipe:
2 cups heavy cream, 1 cup whole milk, dash of vanilla, pinch of salt

I divided the mixture into 3 bowls: plain vanilla, vanilla with added mini chocolate chips and vanilla with fresh strawberries.

Since I don't have an ice cream maker, I followed a process I used when making pomegranate sorbet: every 30-60 minutes I stirred the "forming" ice cream with a wooden spoon. Eventually everything was frozen!

The 3 different flavors tasted pretty good, but I definitely did not achieve the creamy texture of the store-bought ice cream. Will I try this again? Maybe, but only if I come up with some fantabulous add-ins.

  2. Oh I was curious about the texture of it since you don't have an ice cream machine - bummer. You could try mint extract with chocolate chips. The strawberry ice cream looks very good!

  6. Why is everybody already starting to make ice cream, isn't still cold out there?
    Hmmm, almost forget, people eat ice cream even though it's freezing out there, right?
    Not where I came from though. In Indonesia, if it's a rainy season (and it's not even cold, maybe about 60 degrees F), no body would dream to eat ice cream. It took me a while to understand why people eat ice cream in the middle of winter. Now, I actually can enjoy eating ice cream in the cold winter.

  8. I love all the flavors but I'm particularly interested in the pomegranate sorbet. I haven't made that flavor yet but it is on my list. My favorite flavor... my taste buds are too fickle, it all depends on my mood.

  9. Your ice cream looks great! I don't have a favorite flavor of ice cream, but there's a local brand here that's so good. It comes in all kinds of fun flavors and they don't skimp on the add-ins.

I have been making ice-cream and sorbet at home for well over 15 years, and I really think an ice-cream maker will make a world of difference to your recipe (and one can find them under $60 new; I bought my first one for $7.00 at a thrift store and it lasted me for over 10 years). I can make flavors that cannot be bought and take advantage of perfectly ripe fruit for incredible sorbets.

    With churning the ice-cream by hand only every 30 minutes, that's not enough air incorporated. You may also want to use 1/2 and 1/2 instead of milk for a creamier texture. Milk provides an icier texture if no egg is added - even in an ice-cream maker.

    Hope you try it again. You might just get hooked on it!

    My favourite?? Almost anything - but dulce de leche is sure nice. Or hazelnut. Or chocolate hazelnut... or... :)

  16. My all-time favorite is really good chocolate ice cream.

    A close runner-up is mint ice cream made from cream steeped in mint leaves. I used the recipe from Perfect Scoop and fresh mint leaves from my friend's garden.

  19. Even using an ice cream maker (I had a cuisinart brand, got it for about $50 and lost the cover in a move), texture has been a problem for me. Generally, it froze too soft, and then it would be rock solid when stored in the freezer. Cream chesse and peanut butter were notable exceptions; I was quite fond of a strawberry cheesecake flavor recipe. The chocolate-peanut butter had a great texture but was too rich. I've heard if you don't have an ice cream maker that freezing in an ice tray and blending the finished product can improve results, but I've never tried it.

  20. My fave would have to be a deep coffee. But made a peach-mango ice-cream last summer, without a machine, & have to say it was awesome!! Great post Olga; the three look delicious!

  21. The pictures look really good, however I don't like ice cream. I know-I hear it all the time! I love milk; could drink a gallon a day, but something with ice cream-I don't know. When we go to DQ I get the grape Mister Misty. Oh wait, now it is called Arctic Rush. If I have any, I like a soft serve with tons of homemade hot fudge and caramel sauce on it.
