A Sweet Way To Start A Weekend

Yesterday for breakfast I decided to make something sweet and soothing: Coconut Rice with Grapes. It might sound like a strange idea, but if you think about Mango Sticky Rice served in Japanese restaurants, you'll understand the inspiration behind this dish.

The amazing thing, all you need to make this breakfast/dessert are 3 ingredients: rice, coconut milk and grapes! (I don't think water should count as an ingredient). I already had rice on hand, and had coconut milk and grapes left over from testing Robyn's recipe, so the whole dish came together in a snap.



Ingredients
2/3 cup coconut milk
1/3 cup water
1/3 cup white basmatti rice
handful red grapes, quartered
sugar (optional)

Directions
1. In a small pot mix together water, coconut milk and rice. Bring to a boil, lower the heat, cover, and cook for 20 minutes.
2. Once the rice is almost completely cooked, add grapes and cook additional 5 minutes.
3. Depending on how sweet you want the dish to be, feel free to add sugar.

Note: I had to add a few tablespoons of water while cooking the rice to get the consistency I wanted.



This was a very easy, sweet, and simple dish. You can make the same thing with other fruits: peaches, mangoes, strawberries, blueberries: go crazy!

  1. Um, I had chocolate for breakfast. Don't judge me, there's lots of chocolate in the house from Valentine's Day! I balanced out the unhealthiness with some grapefruit and kiwi.

  2. It's like rice pudding. Some people put raisins on there rice pudding, but fresh grapes definitely sounds better to me.
