You know how the name of my blog is Mango & Tomato? Well, a few nights ago I decided to come up with a recipe that actually involves both a mango and a tomato! And I did. And I really liked it! So here it is: Mango & Tomato & Avocado Salsa.
Ingredients
1/2 mango, cubed
1 cup cherry tomatoes, quartered
1/2 avocado, cubed
1 tablespoon white onion, finely chopped
1 tablespoon chopped cilantro
1/2 lime, juiced
salt & pepper to taste
Directions
1. Combine all ingredients in a bowl.
2. Mix.
3. Eat!!
Optional: you can also add jalapenos to your salsa. And if your mango wasn't perfectly ripe (as was the case for me), you can even add a bit of sugar!
Please share your ideas of combining mangoes and tomatoes...maybe I'll try them out and post about it!
Perfect! You know I've done a mango and avocado salsa and next time I will do this one with tomatoes too. i'm working on a recipe for mangoes. perhaps I will incorporate a tomato - I need something red for the color :)

ReplyDeleteThat sounds fabulous. I love mangoes so much. I eat them with a bit of salt and paprika but I bet some tomatoes would really add to the flavor! Great idea.
ReplyDeleteJust hand me a couple of tortilla chips, and I'd park myself at that salsa bowl all night. ;)
