Curious what I made with the radishes? So far, I've only used one to make a Watermelon Radish & Watercress Salad with Honey Mustard Dressing.
Ingredients
watermelon radish, peeled, cut into matchsticks
watercress
dressing: 2 parts olive oil, 1 part honey, 1 part mustard
Directions
1. Combine radish and watercress.
2. Whisk together dressing. Season with salt and pepper. Drizzle over the salad.
I need to thank Anna for suggesting I add something sweet to the dressing (honey) to cut the "bite" of the watercress and the radish.
Never saw this one before, the salad looks very refreshing and delicious with honey dressing!

ReplyDeleteI had never seen Watermelon Radishes until last week and saw them in a magazine photo in a pickled radish recipe. They are beautiful and this salad sounds wonderful. Now, if I can just find some.
ReplyDeleteIt's the pink color and green skin that makes them look like a watermelon. I like to serve them in red wine or sherry vinaigrette with black sesame seeds so they look like little watermelons :)
