I love mushrooms. Growing up in Russia, my family used to go mushroom picking quite often, and my parents would marinate them, dry them, make soups with mushrooms, or just saute them with onions and add them to boiled potatoes drizzled with sunflower oil. Delicious.
When I saw that Marx Foods was doing a recipe contest using morel mushrooms, I wanted in! This was not the first time I've collaborated with this company, and I was eager to continue our relationship ;) A few weeks ago I received about 2 cups of dry morel mushrooms and instructions to make "an original hors d'oeuvre recipe." I went through different ideas in my head, but finally decided to make Mushroom, Potato & Pea Potstickers.
Ingredients
2 cups dried morel mushrooms, covered in boiling water for 20 minutes, drained, chopped {do not discard the liquid: you can use it as a base for soups or risotto}
2 cups Dutch yellow baby potatoes, boiled, mashed {try to remove some of the bigger chunks of potato skin}
1 cup frozen peas, defrosted
salt & pepper
1/2 teaspoon cayenne
1 1/2 teaspoons curry powder
1 1/2 teaspoons cumin
1 tablespoon chopped parsley
olive oil
wonton wrappers {I used Nasoya brand}
water
serve with cucumber & dill yogurt dip
Directions
1. In a bowl combine chopped mushrooms, mashed potatoes, peas, parsley and spices.
2. Put about a teaspoon of the mixture on top of each wonton wrapper. Brush the edges with water, seal, and pleat.
3. Heat a cast iron skillet. Add olive oil. Place the potstickers and cook for 3-5 minutes until the bottoms are brown.
4. SUPER carefully add water to the pan (enough to cover about 1/3"), cover, and cook for about 10 minutes.
5. Serve with the yogurt dip.
I can't tell you exactly how many potstickers this recipe makes because I only made 6. I did not have enough time to use up the entire mixture. You can eat it as a side dish, or make potato patties from it by adding an egg and pan frying them similar to these.

ReplyDeleteI love morels, the potstickers look delicious! I would cook them in some butter and sherry and fold them into cream cheese, then smear that on a crostini.

ReplyDeleteHow creative! I've never worked with dried mushrooms before. Even though I know all I have to do is reconstitute them in water, I still get a bit intimidated by them. :-/

These look delicious! They must just explode with flavour! If you didn't have dried morels on hand, I think a mixture of fresh shiitake and oyster would work well...? The flavours might not be as strong, but nonetheless it would still taste fantastic! Thanks for sharing!

ReplyDeleteI have never had dried morels. But the pot stickers look and sound yummy.
I love looking for morels in the spring. We usually soak them in salt water, (mainly to rid them of the little critters hiding inside them),then roll them in a flour and corn meal mixture and fry them in oil. They are good that way, but not a smart choice for someone sensitive to fried foods.
