This time around I decided to give frozen yogurt another try (check out my Mango Peach Frozen Yogurt).
I had a few bags of frozen sour cherries on hand and some fresh sweet cherries. I decided to combine them with tangy yogurt for a refreshing, pretty and relatively healthy summer treat.
Since my last frozen yogurt turned out incredibly frozen, I thought why not try one of the suggestions some of you left for me and add light corn syrup in hopes that this frozen concoction would not be as hard as rock.
And I got to use these two cute containers I bought at Crate & Barrel Outlet: do you like them?
Sour Cherry & Sweet Cherry Frozen Yogurt
Ingredients
3 cups plain yogurt
2 cups pitted defrosted sour cherries with juices (or use fresh ones)
1/4 cup light corn syrup
1 cup pitted sweet cherries, halved
Directions
1. In a blender, puree yogurt, sour cherries and corn syrup.
2. Add the mixture to your ice cream maker and churn for about 30 minutes.
3. Add halved sweet cherries. Churn for 5 more minutes and transfer to a freezer-safe container.

The final result was still really really frozen and I had to let it sit out on my counter and melt a bit before I could scoop it out. The flavor, though, was terrific! If you don't love incredibly sweet desserts, you are going to really like this one.

ReplyDeletewhen did you get an Ice cream maker? I wish there were recipes on how to make ice cream without getting a machine. Maybe the kitchenaid attachment?
ReplyDeleteI make ice cream for a living, and my tip is that you don't have NEARLY enough sugar in there! (wait, you don't have any?) Personally I don't like things to be over sweet either, however sugar doesn't freeze so it is the most important ingredient in any frozen dessert whether it be ice cream, gelato, or froyo. You could also toss in some vodka :)

ReplyDeleteAh man, Dan beat me to it! I actually looked it up in this ice cream book, and they advise to have a sugar content between 12-20% of the ice cream base to ensure proper consistency. If you'd like I can bring this book with me Sunday that has whole chart that helps you break down the different ingredient proportions in your ice cream - it's really fascinating!

ReplyDeleteYep, I know what you mean with the too frozen... I love yogurt icecreams but they do indeed get really really hard once frozen. I like it best when it is just freshly made but obviously I cannot finish the entire bowl. I've heard stories about adding alcohol in small amounts that prevents it from freezing... sofar... no luck so if you find something... Let me know!
ReplyDeleteWell to me the frozen yogurt looks awesome. And I love the cute containers and of course the pictures. I understand when u say too frozen but if it taste good its a killer right. And girl this sure looks and sounds amazingly delicious.
ReplyDeleteThis looks absolutely delicious! I love the Crate and Barrel containers and the matching spoons. I've never had cherry flavored ice cream yogurt and I can imagine sour cherry and sweet cherry blending perfectly together.
