My love for potatoes is endless!
Potatoes are just so incredibly versatile, not to mention filling and inexpensive.
Last weekend I decided to skip grocery shopping because I did not want to leave my condo and head into the cold rainy gray day.
But I still had to eat! So I had to get creative with the few things I had on hand. Potatoes, random vegetables, and a lovely jar of cilantro chutney from an Indian grocery store.
I decided to make up a recipe for Potato Salad with an Indian Twist. For those who hate mayonnaise (I don't understand you!), this is a great alternative. This salad packs a lot of flavor from the store-bought cilantro chutney and is relatively healthy due to the addition of tomatoes and cucumbers. Make it soon and remember to pack it for your next picnic.
Potato Salad with an Indian Twist
Serves 1-2
Ingredients***
2 Yukon gold potatoes, peeled, cubed and cooked in salted water until tender
1-2 tablespoons thinly sliced red onion
1 Roma tomato, diced
1/4 cup diced English cucumber
2 tablespoons cilantro chutney
1 teaspoon cumin seeds, toasted
salt & pepper
Boston lettuce leaves
*** Clearly you can use more or less of each one of these ingredients. These are just my suggestions. Also, if you have fresh cilantro, add it as a garnish on top of the salad.
Directions
1. Combine all ingredients in a bowl.
2. Serve on Boston lettuce.
I know the salad looks sort of funky...that's just what happens once you mix everything with the chutney. I contemplated not posting about this at all, but decided that some of you might be less shallow than me ;)
You can also serve this salad in a bowl instead of using Boston lettuce.
As you are reading this, I'm enjoying this view and the company of the lovely Melissa ;) Don't hate!
Have a great weekend! I'm spending a long weekend in Charleston for a mini birthday trip :)

When listing my potato love, I never leave out fermented because vodka is delicious.
As much as I love potatoes myself, I don't cook them as often as I should. This is a great way to prepare them. They just look delicious!
Happy Birthday! :) Yeah! What a great & inspiring potato salad!
I love twist's on normal recipes a lot! :)
I think this would be totaly tasty too using mango chutney instead of the chutney You used here! :)
Thanks, Sophie! Oooh, love mango chutney...just not sure how it'd go with potatoes and cucumbers.
Please let me know how it comes out.
ha! to each their own ;)
This is such a good idea! I wonder if it would work with egg salad or chicken salad
