Over the past four years, I have written almost 900 posts, received nearly 8,500 comments from you, met amazing people {many of whom became close friends}, attended fabulous events and dined at great restaurants.
I honestly can't imagine my life without my food blog and you, my readers. What started as a way for me to share my love of simple food has turned into so much more.
I want to thank EVERY ONE of you for your support and encouragement, for making my recipes and giving me constructive criticism.
Today, I'm sharing a recipe for a simple meal: Easy Salmon Dinner with Smashed Potatoes.
But wait--that's not all. I have teamed up with Le Creuset, and one LUCKY winner will receive a 5-Piece Set in a gorgeous new color: Marseille.
My love affair with Le Creuset started a while back. Then, a few years ago, my parents gave me a Le Creuset French Oven in Caribbean for my birthday: I was hooked. Not only is it absolutely gorgeous, but it's a joy to cook with.
Little by little I started to build my collection and added two more pieces (see them on the left) in orange and yellow. These "work horses" go from the stove to the oven and to the table. I use them to make stir fry, meatballs, chili, soup, stuffed cabbage, etc. The cleanup is incredibly easy and I love displaying them in my "Le Creuset" tower.
And now I have three more pieces in my collection!

And now let's talk about my Easy Salmon Dinner with Smashed Potatoes. I wanted to make a simple meal using all the pieces from my new Le Creuset set. This is a great meal to make during the weekend, but can also be easily prepared during the week. It's colorful, nutritious and holds up well as leftovers.
Smashed Potatoes
Ingredients
24 ounces petite red potatoes
salt
olive oil
ground black pepper
Directions
1. In a heavy-bottomed pot, cover potatoes with water, add a bit of salt and bring the mixture to a boil. Lower the heat, cover, and let the potatoes cook until they are tender.
2. Drain the potatoes, transfer them to a large plate and lightly smash them using the bottom of a glass.
3. Heat olive oil in the same pot. Add smashed potatoes in a single layer and cook for about four minutes on each side until they become crispy. Season with more salt and pepper.
Easy Salmon
Ingredients
1/2 pound Sockeye salmon fillet
olive oil
salt & pepper
Directions
1. Preheat the oven to 350F.
2. Heat a skillet, add a bit of olive oil. Gently place your salmon skin side up and sear the fish for five minutes.
3. Flip the salmon fillet, season with salt and pepper, and put in the oven for five minutes (or longer depending on how thick your piece of fish is).
Wine Butter Sauce with Shallots
Ingredients
1 teaspoon olive oil
1 shallot, finely chopped
1/3 cup white wine
3 tablespoons butter, cubed
black pepper
2 teaspoons chopped fresh dill
Directions
1. In a small saucepan, saute shallots in olive oil for five minutes.
2. Add wine and allow to reduce by half.
3. Take the saucepan off the heat and whisk in butter into the shallot/wine mixture. Add black pepper and fresh dill.
Serve the salmon topped with the wine butter sauce alongside crispy smashed potatoes and roasted asparagus.

Salmon and Le Creuset together? I'm in the right place! I got my first set of Le Creuset pans from my Mom at my bridal shower 28 years ago. I still have those pans. My Mom isn't with us anymore but I think of her every single time I pull a pan out of the cupboard. My set is the deeper blue color and I've been eyeing this new blue ever since it came out!

I would be so thrilled if I won the Le Creuset set. I used to have a dutch oven that I used constantly but an old roommate moved out and took it with her and I never got it back. Sad face.

Well I love food and i love cooking!!
ReplyDeleteI'd make a rib-eye steak and the Berghoff's creamed spinach (http://www.andrewsmcmeel.com/berghoff-cookbook/berghoff-recipes.html). The skillet is great for searing the steak first, then finishing it in the oven. Comes out perfect. The creamed spinach is a two-pot operation, but so, so worth it. I have two Le Creuset pieces, and I keep finding new uses for them.

ReplyDeleteI am a poor college student with a penchant for disregarding my budget when it comes to grocery shopping. Although I may not skimp on buying quality ingredients, my mother says paying my tuition is more important than buying expensive cookware and that I can't afford Le Creuset, but I think you might as well start with the best because it lasts forever. It's a great investment (that I just can't invest in right now).

ReplyDeleteSpeaking of trying your posted recipes, I tried one that you posted a few days ago. The Zucchini, Tomato and Feta Gratin. Oh my goodness it was Soooo Good!! I loved it and it was so easy to prepare. My hubby loved it too. We had it along with a filet and baked potato. The only thing I did differently was to add a bit more cheese. My husband is a BIG cheese lover, so the more cheese the happier he is. We had some left over after our meal, so I enjoyed it for lunch the next day as well as dinner that night. It was just as good then as it was when I first prepared it.
Thanks for posting your recipes. I enjoy them so much. I love trying new foods and recipes. Your photos help with the preparations. I would like to see the printable versions of the recipes again. I know at one time you had that as part of your posts.
And, I would LOVE to win that cookware, I could really use some beautiful new cookware!

ReplyDeleteJust found this blog via foodgawker and I "big puffy heart" the recipes I see on here!! I have been longing for some Le Creuset for years! I love their dutch oven pot because if I understand correctly I can use it on the stove and in the stove!!

ReplyDeleteFirst off---Happy Blogoversary! The reason I love Mango Tomato so much is because you post the most beautiful photographs of food that it makes you want to run out and make whatever recipe you just posted.
ReplyDeleteAlso I loved when you were on your hash kick and posted SO MANY amazing photos of recipes I loved to try out in my own kitchen. Same goes for any time you top a dish with an egg! :)
I have one Le Crueset which I use for short ribs, stews, soups etc. It is such an incredible tool to have in the kitchen. I would love to add to my collection.

ReplyDeleteI love Le Creuset because my mother always used hers for Sunday family meals! It was a great tradition my whole life, and now when the family comes together she still uses it. Such a great nostalgic feeling, and great quality cookware!
