If you've met me, or have been reading my blog for a while, it would come as no surprise to you that oatmeal is not my favorite option for breakfast. I prefer savory dishes, especially those topped with a poached egg.
But that would not be something that can easily be done in a cubicle at work. So this weekend I decided to experiment with oatmeal and make something that's good for me and easy to do in about 10 minutes.
Not only is this a quick, nutritious and delicious breakfast, but it will fill you up and leave you satisfied. Plus, because I only used water to make the oatmeal, this entire meal is vegan!!
Quick, Nutritious & Delicious Breakfast: Load Me Up Oatmeal
Basically, this is not really a recipe. All I did was to cook oatmeal in a small pot and then add fun things to it. The sweetness from the mango, dates, and blueberries eliminates the need to add any sugar. The crunch of the toasted almonds adds a bit of dimension to this dish.
See, this is not your typical brown blah oatmeal with some brown sugar. But if that's what you like, go for it!

Looks chock-full of good stuff! I have different breakfast moods all the time. Sometimes I want eggs, sometimes oatmeal, sometimes fruit and yogurt, and sometimes chocolate croissants!
Now I want a chocolate croissant RIGHT NOW :)
