Vegan Farro & Red Cabbage Salad: Filling, Colorful & Good For You Recipe
Ingredients
3 cups cooked faro
1/2 small red cabbage, thinly sliced
4 radishes, thinly sliced
1/2 cup quartered olives
juice of 1 Meyer lemon
drizzle of olive oil
salt & pepper
chopped pistachio nuts
1. In a large bowl combine all of the ingredients but pistachios.
2. Serve this salad in individual bowls garnished with chopped pistachios.

O no!! You broke your arm!! I've not been around - as you might have noticed - and probably missed it but hope it heals soon!
I made faro salad last night! We are such twins. Mine was with kale, carrots, pepper, cucumber, tomato, and feta. Soon to be posted :)
