What to do with Chinese Leftovers: Chinese Eggplant & Kimchi Fried Rice


A few weeks ago I had dinner plans with my friends Christina and Sarah, but had to cancel because of my broken arm. Lucky for me, the girls came over to my condo instead and brought Chinese food, took out the garbage and washed my hair. I'm a lucky girl to have such great friends.

There were plenty of Chinese eggplant leftover, so I decided to turn it into Chinese Eggplant & Kimchi Fried Rice. You know how I love fried rice!!!! Added bonus: this is a perfect snow day Meatless Monday recipe!


Chinese Eggplant & Kimchi Fried Rice
Ingredients
cashews
olive oil
egg(s)
rice
Chinese eggplant leftovers
kimchi
defrosted peas

Directions
1. In a large skillet, toast cashews. Remove the nuts from the skillet, chop and set aside.
2. Add a bit of olive oil to the skillet and quickly scramble the egg. Remove from the skillet and set aside.
3. Add the remaining ingredients to the skillet and saute to heat through.
4. Add back the scrambled eggs, combine and serve in a bowl topped with cashews. 
 

This was an awesome meal! Because there were already so many strong flavors in both the Chinese eggplant and kimchi, there was no need to add other spices.
