Last week I had every single evening booked: dinner with friends, preview of Train Wreck movie (go see it!!!), pottery class, salsa dancing. There was little time to do any major grocery shopping or cooking. Still, I managed to make something healthy, satisfying and delicious. The photograph of my Vegan Sweet Potato, Corn, Tomato & Olive Salad got a lot of likes on instagram, so I thought I'd share the recipe with you.
Vegan Sweet Potato, Corn, Tomato & Olive Salad
Serves 2
Ingredients
1 large sweet potato, cooked till tender (either boiled or roasted), skins removed, diced
1 corn, charred directly on the flame, kernels removed
10 grape tomatoes, quartered
10 green olives, pitted, chopped
chives, chopped
olive oils
salt & pepper to taste
Directions
1. Combine all ingredients. Serve.
